Macarons are a delicate biscuit made with ground Australian almonds and Italian meringue, sandwiched together with creamy chocolate ganache or butter cream flavoured with real fruit.

We have also created our own award winning macaron recipes using other Australian nuts, such as hazelnuts, macadamia,pistachio and walnuts.Our pistachio and lime macaron has just taken out a silver medal at the 2012 Sydney Fine Food Show. Macaron flavours are:pistachio and lime; raspberry; hazelnut and chocolate; passion-fruit; cherry and chocolate; walnut and whisky (using single malt - our "blokes macaron"), and the all-time favourite, salted caramel, using French Fleur de Sel

Lime Tarts and more...

Currently we have a regular product lineup that includes luscious lime tarts and vanilla brulees, eclairs, assorted fruit tarts, pecan pies with maple syrup, mini lemon tarts and salted caramel and chocolate tarts, florentines, biscotti and cinnamon stars, and brownies. We also make quiches, sausage rolls and Roman style pizza of the day.

Croissants, Brioches, Danish...

Every Saturday and Sunday to sell at the markets we make croissants, fresh fruit Danish, snails, (pain au raisin. Recently we added pain au chocolat (chocolate croissants) to the list, using French Dark chocolate, 55%. We now sell these every day in our new shop in Fyshwick. They are made using organic flour and cultured butter.

Catering & corporate

We can provide for your event, supplying small savoury and sweet tarts, bite size brownies, macarons, wedding macarons (size of a 20c piece) or mini macarons, large cakes with macarons on top and macaron towers.
